Directions: In a pan heat the olive oil to medium-low heat. Add the spring onions and cook until translucent, about 5 minutes. Add the yellow potatoes and cook another five minutes. Add the purple potatoes and season with salt and pepper.
Allow potatoes to cook, covered for 10 minutes. Uncover, taste for seasoning and adjust seasoning. Increase the heat to medium-high and add the butter to the pan. Saute the potatoes until lightly browned, taking care to avoid burning the spring onions.
Serve hot as soon as they are finished.
