Chinese chicken in plum sauce (mwei jiong gai - canton) PREPARATION: Cut chicken into bite-sized pieces. Peel carrots and cut into cubes.
Crush garlic.
COOKING: Place oil and garlic in skillet. Brown Chicken, stir 5 minutes,
cover, reduce heat, and simmer 10 minutes. Add plum sauce celery,
ginger, Chicken cooney Dissolve cubes in 1 cup hot water. Combine eggs and milk together, dip chicken into mixture. Then dip chicken into bread crumbs. Brown chicken 2-3 minutes on each side.
Place chicken in a 9" X 13" pan. Put 3-4 button mushrooms on each breast. Po Basic hot pepper sauce Simmer vinegar, salt and peppers at least 5 minutes. Process in processor. Store in a glass bottle. Put in a dark cabinet and let age at least 3 months. Strain when ready to use.
