Spicy pineapple and mint salsa In a medium bowl, combine the onion, chiles, garlic, orange and lime
juices, and pineapple. Add oil; stir to combine. Let stand at room
temperature at least 15 minutes or up to 1 hour. Just before serving, add
mint; toss to combine.

Mango and pineapple salsa Mix all ingredients together and marinate in the refrigerator for one hour.
Bacon, avocado, and cheese omelets with tomato salsa jalapeno, the coriander, the lime juice, and salt and pepper to taste
until the salsa is combined well. In a bowl whisk together the eggs,
the water, and salt and pepper to taste.
In an 8-inch skillet, preferably non-stick, heat 1/2 teas Chipotle turkey cutlets with charred corn salsa Char corn in heavy medium nonstick skillet over medium-high heat, stirring
often, about 4 minutes. Set aside.
Sprinkle turkey on both sides with chile powder; sprinkle with salt. Heat 1
tablespoon oil in large skillet over medium-high heat. Add half of tu Apple salsa Core and dice apples in 1/4 inch pieces. Toss immediately with lime
juice. Stir in remaining ingredients. Chill 2 hours before serving.
Good with pork, chicken, turkey and fish. Makes 3 cups.
Orange roughy with tomato-cilantro salsa For salsa: Toss all ingredients in large bowl to combine. Cover and
refrigerate. (Can be made 4 hours ahead. Keep chilled.)
For fish: Preheat oven to 400F. Heat oil in large skillet over medium-high
heat. Sprinkle fish with salt and pepper. Place flour in Fruit salsa In a mixing bowl stir together the strawberries, orange, kiwifruit,
pineapple, green onions, green pepper, lime juice, and jalapeno.
Cover and chill for 6 to 24 hours.
"upstairs" langoustine and mango salsa Blanch langoustines in boiling water, refresh in iced water, remove meat
from shell and dry. Wrap langoustine and diced mango in pacetta, then
skewer.
To make the salsa: mix all the ingredients thoroughly , reserving a few

then add the chicken broth and saute until the broth is about gone. Add
the habaneros (I roasted mine first), the diced tomatoes (okay, I added the

2. In a large bowl, toss together the flour, bread crumbs, cornmeal,
salt, thyme and cayenne. Put the chicken in a bowl of cool water.
