SCRAMBLED EGG CASSEROLE



Ingredients:
1 chopped cooked ham or canadian-style bacon
1/4 chopped green onions
3 butter or margarine
12 lightly beaten; eggs
1/4 fresh mushrooms
1 recipe; cheese sauce; see below
4 margarine or butter
2 1/4 (3 bread slices) soft bread crumbs
13/625 Ounce(s) paprika
Directions: In a large frying pan cook ham and onions in 3 T. butter until onions are tender but not browned. Add eggs and scramble until just set. In a sauce pan, melt 2 T. butter; blend in 2 T. flour, 1/4 tsp. salt and a dash of pepper. Slowly add 2 cups of milk; cook and stir until bubbly; Stir in 1 cup cubed Velveeta cheese. Turn egg mixture into a 12 x 7 inch baking dish. Pour cheese sauce over egg mixture and carefully fold it into eggs. In a fry pan melt, 4 tsp. butter; add bread crumbs and brown. Sprinkle crumbs on top of egg mixture; bake uncovered at 350° for about 30 minutes or until bubbly. Yield: 6 to 8 servings.
