SASSY BEAN AND BULGUR



Ingredients:
1 1/2 Tablespoon(s) Sunflower oil
3 Ounce(s) Kidney beans; cooked
3 Ounce(s) Bulgur; cooked
3 Ounce(s) Brown rice; cooked
3 Ounce(s) Mushrooms; sliced
3 Ounce(s) Carrots; sliced
1 Ounce(s) Scallions; chopped
1 Ounce(s) Green onion, chopped
1/2 Teaspoon(s) Mixed vegetable seasoning
1/2 Teaspoon(s) Crushed peanuts
3 Ounce(s) Spinach leaves
Directions: Preheat oven to 350 degrees. Lightly grease 4 x 8 baking pan with sunflower oil. Combine all ingredients together except spinach leaves. Mix well. Transfer to a baking pan and place in oven for 20 minutes. Serve on bed of spinach leaves. From DEEANNE's recipe files
