Sherry marinade Combine all ingredients until well blended. Before add to the meat, stir
well to be sure honey is combined with other ingredients and has not
settled to bottom. Its a good idea to stir while marinating for the same
reason. Yield: 2 cups.
Honey-hoisin marinade Combine all the ingredients in a nonreactive bowl or blender.

Pineapple beef marinade Add all the ingredients, stiring with wish making sure the sugar dissolves.
Allow to sit for an hour so the flavors blend. Place meat in a freezer bag
large enough for all the meat to lay flat on one side of the bag. Stir
marinade one more time Chinese red marinade Combine all ingredients in a bowl. Makes about 3/4 cup
Asian pork marinade In small bowl, combine marinade ingredients; pour over pork. Seal bag; refrigerate for at least 1 hour to marinate, or up to 24 hours to enhance flavor.
Coconut chili marinade *1 cup cream of coconut can be substituted for 1 cup unsweetened coconut
milk.
1/2 teaspoon ground ginger can be substituted for 2 teaspoons chopped fresh
gingerroot.
In medium bowl stir together all ingredients. Use to marinate 2 pounds
Adobo marinade 2 Blend cumin, garlic and lime juice until smooth. Taste and season with
pepper. Marinade fish (chicken or meat) in the refrigerator for 1 hour.
Jollie ollie's marinade for all meats Put juices into mixer and add spices. Mix till a bit foamy. Then taste, if
too tart, use honey to make it almost sweet. It should be slightly tart.
Now put cut up meat and marinade in marinade pan and let stand in room temp
for an hour. Then Vietnamese lemongrass marinade Cut off the top 2/3 of each lemon grass stalk, trim off the outside leaves
and roots, and slice the core thinly.
Puree the lemon grass, garlic, shallots, chilies, and brown sugar to a
fine paste. Work in the fish sauce, lime juice, and hot sauc Hunan marinade Combine all the ingredients in a medium bowl.
Use with any kind of beefsteak, lamb, or duck. Marinate 1-3 hours or use as a dipping sauce.
Chicken marinade Combine marinade ingredients. Place in glass bowl or dish that will hold
chicken in single layer. Add chicken; let marinate a minimum of 4 hours,
turning occasionally. May be left in fridge, covered overnight. Remove
chicken from marinade. Tandoori marinade Whisk together ingredients in a nonreactive bowl. Arrange meat in a
shallow nonreactive dish or resealable plastic bag. Cover with marinade;
rub gently into meat. Cover; refrigerate for length of time in "Marinating
Times" recipe, turning mea Red wine and pepper marinade Combine all ingredients in a bowl. Makes about 1/3 cup.
Spicy marinade for shrimp Combine all ingredients and marinate shrimp for 30 minutes. Thread 3 shrimp
onto a water-soaked bamboo skewer and grill 2 to 3 minutes per side.
Refreshing yogurt marinade Using a sharp knife, cut mango flesh away from pit and peel. Cut flesh into
chunks. Combine mango and remaining ingredients in food processor; process
until smooth and flecked with mint. Before using marinade, reserve 1/2 cup
to serve as a dipp Lemon and thyme marinade This is a tangy marinade, containing equal amounts of lemon juice and oil,
and is good for rich meats like chicken thighs. It can be used for chicken
breasts too, but their skin should be on for additional protection during

or non-aluminum bowl. Combine remaining ingredients; pour evenly over

Brown sugar marinade for bbq spareribs 1. Mince ginger root, then combine with remaining ingredients.
2. Rub mixture over spareribs. Let stand 1 hour, then roast.
Adobo (smoked chile marinade) #1 Toasting the chiles and garlic. Roast the garlic cloves on a griddle or
heavy skillet over medium heat, turning frequently, until blackened in
spots and VERY soft, about 15 minutes. Remove, cool, skin and roughly chop.

chicken pieces and shake to coat all parts. Place in refrigerator for at

Pour Vernors (ginger ale) and 8 oz orange juice concentrate in cavity Tandoori spiced chicken Combine all ingredients and marinate the chicken breasts for 30 minutes.
Broil on HI for 8 minutes each side.
Marinade for beef jerky Slice the beef as thin as you can across the grain. Mix the marinade
ingredients, put the meat in the mixture and refrigerate for at least 12
hours, 2 days if possible.
Pat the meat dry, and set it on the dryer rackes for 2-3 days. Check by

Mix all ingredients together. Leave to marinade for at least half an hour.

(6 hours if refrigerated). Marinade can also be used as a basting sauce
when grilling.
If you are rotissing a beef roast, marinade can be used as a basting sauce.
