Directions: For a 5-6 pound leg of lamb, Preheat oven to 450F .
combine 1 T pepper, 2 T salt and 1 T finely chopped rosemary; rub all over
meat. Cut 15-50 evenly spaced slits into leg and insert slivers of garlic
or whole garlic cloves, into each slit. rub surface with olive oil.
Arrange the meatier side up on a rack in a roasting pan. Place in oven and
immediately reduce temperature to 325F .
roast until a thermometer inserted into the thickest part reads 125F to
135 for medium rare - about 1 1/2 hours.
Remove, cover with foil, and let rest for 15 minutes. Don't forget mint
