Directions: This cut is best slow roasted. In general, a 3 pound loin whould take 1
1/4 to 1 1/2 hours total cooking time, and will serve 4.
Preheat oven to 450F . Mix together 1 T olive oil, 1 tsp sage, rosemary
or thyme and salt and pepper to taste. Rub onto entire surface of meat.
Place meat on a rack in a roasting pan. Roast for 10 minutes and reduce
the oven temperature to 250F . roast until the meat reached 140F .
Remove and let stand for 15 minutes. Skim fat off the juices in the pan;
place pan on medium heat and add 1/2 to 1 cup white wine. Boil, scraping
browned bits, until slightly thickened. Spoon over meat and serve.
***Add 20 minutes to total cooking time if the meat is stuffed.
