Directions: One 4-5 pound fillet will serve 8.
Preheat oven to 425F and position rack in
the center. Lightly oil a
roasting pan. Mix together 2 T olive oil, 1 T minced garlic, 2 tsp each
rosemary and thyme and salt and pepper to taste. rub onto the entire
surface of the meat. Place meat in roasting pan and cook until
thermometer inserted in the thickest part of the roast reads 120F for
rare, 125-130F for medium rare, etc. (or 25-45 minutes cooking time). You
can baste with pan juices halfway through cooking. Remove from oven,
cover loosely with foil and let rest 15 minutes.
