Directions: 1. Heat the oil in a heavy-based pan or flameproof casserole. Add the onion and garlic and cook gently, stirring occasionally, for 2 minutes. Add the rice and cook for an additional minute, stirring. Pour in the stock, increase the heat and bring the rice to a boil. Reduce the heat to a very low simmer.
2. Cover and cook rice for about 10 minutes or until the rice is just tender and the liquid is absorbed.
3. Sprinkle with lime juice and fork the rice to fluff up and to mix the juice in. Sprinkle with the cilantro and serve.

Heat oil in hot wok or large skillet over high heat. Add chicken, green onions and carrot. Stir-fry 3 minutes, or until chicken is thoroughly cooked.

Vietnamese rice paper wraps Soften the rice wrappers either by dipping in warm water or by spraying or
painting with warm water until pliable.
