Rainbow Fruit Compote



Ingredients:
2 medium Oranges
1/3 Cup(s) Sugar
1/2 Teaspoon(s) Finely Shredded Lemon Peel
1 Tablespoon(s) Lemon Juice
1/8 Teaspoon(s) Cinnamon
1 Cup(s) Fresh Blueberries
1 1/2 Cup(s) Cubed Cantaloupe
1 Cup(s) Peeled, Sliced Kiwi Fruit
1 Cup(s) Halved Strawberries
Directions: Over a small bowl peel and section oranges, reserving juice. Stir sugar, lemon peel, lemon juice, and cinnamon into oranges and reserved juices. Cover and chill for several hours or overnight. Use a slotted spoon to transfer oranges to a 1 1/2-quart glass compote, reserving syrup. Layer blueberries, cantaloupe, kiwi, and strawberries atop oranges. Drizzle reserved syrup over all. Sprinkle with toasted coconut.
