Directions: Roast the tomatoes over the high flame of a gas range or a broiler. Turn
every 20 seconds, so skins blister evenly. Peel by running under cold water
and rubbing with your fingers. Chop the tomatoes coarsely and toss with
warm rice. Mix the dressing ingredients together and toss with the rice and
tomatoes. Season with salt and pepper to taste.
Per serving: 349 calories, 4 g protein, 42 g carbohydrate, 19 g fat, 3 g
saturated fat, 7 mg sodium, 4 g fiber, no cholesterol.

Spanish rice 2 Lightly brown rice in oil over medium heat, stirring constantly. Add
bell pepper amd onion and saute' five minutes more, stirring often.
Remove from heat; add parsley, tomato paste and garlic. Stir well and

Press mixture firmly and evenly over bottom and sides of a greased 12 inch
pizza pan or 2 (9 inch) pie pans. Set aside. Add onions to broccoli and
cook according to packag Oriental noodle salad Prepare salad: Cook pasta according to package directions. Add carrots and
snow peas during last 30 seconds of cooking time. Drain; rinse with cold
water; drain well. Combine pasta, red pepper, green onion, bamboo shoots,

tender. Unwrap, detach husks and spread with Summer salad with blueberries In a small bowl, whisk together ginger, vinegar, lemon juice, and salt.
In a serving bowl, combine scallions, jicama, honeydew, bell pepper, and
blueberries. Pour ginger mixture over salad and toss to combine (can be
made 30 minutes before).
Just before Pasta salad supreme Combine all ingredients in a salad bowl. Toss gently to mix. Chill before

Pasta salad with tomatoes & corn Whisk 4 tablespoons oil, vinegar, basil and garlic in large bowl to blend.
Heat remaining 1 tablespoon of oil in heavy skillet over medium heat. Add corn; saute' 3 minutes. Add corn to dressing in bowl. Add tomatoes, pasta and cheese to blend.

amic vinegar in small saucepan over medium-high heat until syrupy
and reduced to 1/4 cup, about 4 minutes.
Whisk oil and Champagne vinegar in bowl. Season with salt and pepper. (Can
