Preheat oven to 375 degrees. Remove excess fat from chicken; season
with salt. Combine rice, fruit, onion, 2 tsp of the curry powder,

stalks with knife or vegetable peeler, if desired.
Place spears in a steaming rack over boiling water;
cover and steam 4-5 minutes or until spears are

dressing; pour over salad. Toss lightly, and chill until serving time.
Mound on crisp salad greens. Garnish with slices of hard-cooked eggs.

Potato and rice burgers In a bowl, combine sauce ingredients. Place in refrigerator to chill.
Prepare grill or griddle. Boil potato in water over medium heat until
tender, about 10 min. Meanwhile, combine remaining ingredients in a medium

turner to cut and remove cook Cumin rice with eggplant & peppers RINSE THE RICE, cover it with water and set it aside to soak while you
prepare the rest of the vegetables. Preheat the oven to 375F. Warm the oil
and butter in a large skillet. Add the eggplant and onion, salt them
lightly, and rapidly saute th Lemon parsley chicken and rice Brown chicken in hot oil in skillet. Add broth; bring to boil. Stir in
rice. Return to boil Reduce heat to low; cover and simmer 5 minutes.
Remove from heat. Stir in parsley, lemon peel and pepper; cover. Let
stand 5 minutes. Sprinkle wi Brown rice, nuts and berries wrap Prepare rice according to package directions.
While rice is cooking, lay tortillas on a flat surface. Equally divide cream cheese on tortillas, spread. Top with equal amounts of rice, spreading on top of cream cheese. To each tortilla, add equal amounts o "field of greens" wilted spinach w/ lemon and pine nuts Sort throught spiach, discarding stems and bruised or yellow leaves.
Wash spinach in plenty of cold water; if sandy, wash the second time,
then spin dry. (or dy on paper toweling. And water left on the
leaves will help it to wilt quickly.)
Heat Mushroom brunch rice Bring broth to a boil. Add other ingredients. Reduce heat and cover.
Simmer for 20-25 minutes. Remove bay leaf and serve.

Meanwhile, in a med saucepan combine green pepper and 1/2 cup water. Bring to boiling; reduce heat. C Teresa's spanish rice Chop onion and saute in oil with garlic clove. When onion is translucent,
add cumin, paprika, and red bell pepper and cook a moment more, until
spices
are fragrant. Mash garlic clove with a fork. Add oregano, rice, salt and
water. Bring Wild rice and sweet potatoes I cook them together in the rice cooker with equal amounts of water.
Fill into plastic lunch box. Mix for cooking. Nuke for 10 minutes on high.
Note: This can also be made using a pre-cooked sweet potato. Then the nuke time is reduced to 3 minutes f Lentil and brown rice soup In a heavy kettle, combine the broth, 3 cups water, lentils, rice, tomatoes
and juice, carrots, onion, celery, garlic, basil, oregano, thyme, and bay
leaf. Bring mixture to a boil and simmer, covered, stirring occasionally,
for 45-55 minutes o Foil-baked chicken, rice and cabbage Cut chicken in quarters. Simmer onion in the melted butter for 5
minutes. Add cabbage and simmer 10 minutes longer. Add salt, rice and
undiluted soup, stirring as it heats. Have ready four pieces of
aluminum foil, 12 x 12 inches. Lightly oil one Simple spanish rice In a saucepan, saute green pepper, tomato and onion in oil until tender. Add rice; cook and stir for 2 minutes. Stir in broth, salt if desired and pepper; bring to a boil. Reduce heat; cover and simmer 25 minutes or until rice is tender. Yield: 2 servings Mexican chicken & rice Prepare sauce in small saucepan by mixing 2/3 can tomato sauce and
spices. Add chopped, cooked chicken. Put sauce on low heat and stir
occasionally. Prepare rice. When rice is done, and remaining 1/3 can
tomato sauce to rice and stir. To serve, pl Lentil rice burgers (vegan) A very easy & tasty vegetarian burger taken from
Vegetarian Times Mag Aug 93 issue with a few of my own
additions. Cook rice till cooked and slightly
sticky(white rice, I use basmati will take approx 20
min ), & lentils till soft. Co Hamburger rice Cook rice and brown ground beef. Mix both into 9x13 dish. Add the Soup and milk and mix. Add green peas. Salt and Pepper to taste. Top with 1-2 cups cheese.
Bake 350 for 20 min
If you use the rice while hot you can microwave it till cheese melts 4-5 Wild rice dressing Rinse wild rice in a strainer under cold running water for 1 min. In med
saucepan combine wild rice, water, onion, brown rice, bouillon granules,
thyme and pepper. Bring to boiling; reduce heat. Simmer, covered for 45
min.
Stir mushrooms, Fruit salad with nuts Scoop out melon with melon baller. Cut peel from oranges, remove white
membrane, and slice crosswise. Cut grapes in half and remove seeds. Line
a glass bowl with lettuce leaves; arrange melon balls, orange slices,
grapes, and walnuts in layers on top o Eggplant and pepper casserole with rice Rinse rice, cover with warm water and set aside while preparing
vegetables. Preheat oven to 375 degrees.
Heat oil in a wide skillet, add eggplant and onion and saute rapidly to
distribute oil. Cook until eggplant is somewhat tender, about 15 Acapulco rice Combine tomato sauce, water and chili powder in a medium sized
saucepan. Bring to a full boil. Stir in rice. Cover, remove from
heat and let stand for 10 minutes. Sprinkle with tortilla chips and
cheese. Serve with shredded lettuce and sour Almond and rice flour bread with poppy seeds Preheat oven to 350 degrees F. Butter an 8 x 4inch loaf pan.
Place almonds and 1/2 cup of the flour in bowl of a food processor and
grind until a fine meal is formed--the flour will prevent the nuts from
turning oily. Add remaining rice flour, the Rice with lime 1. Heat the oil in a heavy-based pan or flameproof casserole. Add the onion and garlic and cook gently, stirring occasionally, for 2 minutes. Add the rice and cook for an additional minute, stirring. Pour in the stock, increase the heat and bring the r Natto fried rice 1. Prepare the natto (Add soy sauce. Stir the natto with chopsticks for about 30-60 seconds. Do not mash. Stir fast and well.)
2. Take the seeds out of the pickled plum (umeboshi), chop.
3. Chop onion and saute in an oiled pan until soft.
4. Add natto to Orange rice muffins In large bowl mix, bananas, orange juice concentrate, and oil. Add
flour and baking powder. Blend well. Fill six 2 1/2 inch nonstick
muffin cups 2/3 full. Bake at 375 for 20-25 minutes. Turn out onto a
wire rack to cool. Variations: add 1/2 cup Crazy coconut rice Place rice in a large bowl and pour water and coconut milk over it. Stir and set aside. In a large skillet, heat oil and saute cumin, cinnamon, cardamom, chile, and carrots over med-high heat for a minute. Stir in lemon grass, salt, and rice with soaking Light herbed rice cake "For a picnic, serve these squares of cheese, and other herb-flavored
rice warm or at room temperature. They are also delicious eaten hot
with tomato sauce and thin slices of cold rare roast lamb or beef."
Preheat oven to 350F.
In a me Brown rice and chicken salad Rinse frozen peas with cold water to separate, drain. Mix peas, rice, chicken, celery, cheese, olives and onion. Mix remaining ingredients, toss with chicken mixture. Cover and refrigerate at least 2 hours. 1. Place water and onion in a medium saucepan. Saute
until onion softens slightly.
2. Add the spinach. Cover and steam until just
tender, 4 to 5 minutes.

Cook the wild rice in the water until tender, about 1 hour. Add more
water, if needed.
Meanwhi Wild rice with shiitake mushrooms Add the olive oil to a pan and heat to medium. Add the onion and the salt and saute until the onion becomes translucent. Add the rice and stir until all rice is coated in oil. Add the water and broth and bring to a boil.
