Cuban roast pork loin The combination of orange and lime juices mimics the tang in a marinade of bitter oranges, which would traditionally be used. Serve with rice and beans, or use the meat in a Cuban Sandwich.
Special equipment: a 3-to-4 quart heavy ovenproof oval or round Green pasta dough Spinach Pulp:
Place a few of the spinach leaves in the blender, add the water, and blend
to a smooth puree. Gradually add the rest of the spinach leaves, blending
until smooth. Place the puree in a piece of cheesecloth. Squeeze the
juice out into a sau Black-eyed pea and pasta salad In a blender, food processor or bowl, combine the oil, vinegar, mustard, garlic, cumin, sugar, salt, orange rind, and hot pepper sauce. Blend until smooth.
