Ingredients:
2 pork chop
1 Ounce(s) black pepper
1 Ounce(s) salt
489/10000 Pound(s) butter
3/4 sliced button mushroom
1/2 white wine
3 Bunch(s) dried tarragon
Directions: Season the pork chops with salt and pepper. Cook the chops in a small amount of oil for approximately ten minutes per side (for thick chops). Remove the meat. Melt butter in the same pan and saute mushrooms. Add the wine (you can substitue chicken stock, but the wine creates a tangier flavor) and stir. Finish with several generous pinches of dried tarragon, and more butter if desired. Serve sauce over the chops.
