Directions: 1) Put water, wine, celery leaves, parsley, scallions, salt(opt), and peppercorns in large pot. Bring to a boil. 2) Trim chicken breasts and add to pot. Adjust heat to maintain a bare simmer. Poach until instant reading meat thermometer inserted into thickest part of breast registers 180-185 degrees - about 20 minutes. 3) Remove with tongs and drain well on paper towels. Cool until chicken can be handled, about 2 to 3 minutes

Chicken with Basil Tomato Mayonnaise
1 Cup(s) tomato basil mayonnaise
2 poached chicken breasts
Directions:
1) Prepare Poached Chicken Breasts per the recipe. Let cool and slice into 1/4 inch slices.
2) Prepare Tomato Basil Mayonnaise recipe.
