African tomato-avocado-buttermilk soup Puree tomatoes in a food processor or food mill, then press through a sieve
to remove seeds. In a large mixing bowl, beat the pureed tomatoes, tomato
paste, buttermilk, and oil. Toss pureed avocado with 1 tablespoon lemon
juice to hold the color. Avocado/zucchini enchiladas Heat oven to 325F degrees.
Cut the avocado in half and scoop the flesh with a teaspoon into a bowl.
Then mash it with a fork, add 1 clove crushed garlic, 1/2 teaspoon chopped
chile, and lime juice. Season with salt and pepper to taste.
