Ingredients: 3 butter 1 finely chopped onion 2 large garlic 1 Can(s) 28 oz. tomatoes, whole plum 1/4 vodka 1/4 red pepper flakes 1/2 heavy cream 12 basil leaves 1 1/2 Gallon(s) water 1 27/625 Ounce(s) salt 1 penne |
Directions: Melt butter in large skillet over medium heat. Add finely chopped onion. Cook, stirring until just starting to color, about one minute.
Stir in one 28-oz can whole plum tomatoes (lightly drained and chopped), 1/4 cup vodka and 1/4 teaspoon red pepper flakes. Simmer briskly for 10 minutes. Stir in 1/2 cup heavy cream. Heat through. Stir in 12 fresh basil leaves, chopped an
d salt and pepper to taste.
Meanwhile, bring to a rolling boil in a large pot 6 quarts of water, 2 tablespoons salt. Add penne and cook until tender but firm. Drain and remove to a large serving bowl. Toss with the sauce and serve very hot.
