Ingredients: 4 Ounce(s) peanut butter 2 cut into 1 1/2 inch pieces tomato concentrate, double-strength 1 finely chopped onion, yellow 3 Cup(s) water 1 chipotle pepper powder 2 bay leaves |
Directions: Heat the oil in a pressure cooker set to brown. Add the onion and cook for 3 minutes, or until the onion is translucent. Add the steak and cook, stirring occasionally, for 5 minutes, or until the meat is lightly browned on all sides. In a small bowl, combine the peanut butter with 1.5 cups of cold water, then pour it over the meat. Dilute the tomato concentrate with 2 cups of hot water and pour over the stew. Stir thoroughly. Add the chipotle pepper powder, bay leaves, and salt and black pepper to taste. Set pressure cooker to high and time to 20 minutes. If possible, let the pressure drop naturally. Remove and discard the bay leaves.
Serve hot.
