Pate of Chicken Liver



Ingredients:
1 Pound(s) fresh chicken liver
2 Teaspoon(s) salt
1/2 Teaspoon(s) (or more, to taste) ground cayenne pepper
7/8 Cup(s) (or combination of) rendered chi goose fat
1/8 Cup(s) bacon fat and/or butter
1/2 Teaspoon(s) nutmeg
2 Teaspoon(s) dry mustard
1/4 Teaspoon(s) ground cloves
2 Tablespoon(s) finely minced onion
Directions: 1. Bring chicken livers to a boil in a saucepan filled with water to barely cover them. Bioil 15 minutes, covered. 2. In a food processor or blender combine all the rest of the ingredients. Blend until smooth. If desired, you can add a few truffles or an anchovy to enhance the flavor.
