Directions: Pate aux Poireaux
This leek and cheese quiche from Ile d'Orleans is related to the Flamiche
aux poireuax, a savory leek tart made in northern Franch and Flanders. The
same recipe can also be used to make small tarts.
Heat 4 tablespoons of the butter in a heavy saucepan, add leeks and cook
over low heat for 10 minutes. Add water, cover and simmer gently for 20 to
25 minutes or until tender.
In another saucepan, melt the remaining two tablespoons butter, blend in
flour and cook over medium heat until bubbling. Blend in leek mixture,
bring to a boil and season with salt and pepper. Remove from heat.
Beat egg and cream together, blend with leek mixture and pour into
unbaked tart shell. Sprinkle top evenly with cheese. Bake in preheated
400F oven for 25 to 30 minutes or until cheese begins to brown.

Lentil and leek risotto [t] In a 4 quart deep pot with cover, saute leeks, garlic and red pepper in a small amount of the broth. When soft, add the rest of the broth or water, and stir in rice along with seasonings. Serve as the main course of a light lunch or supper.
PREHEAT OVEN TO 350F. Snap coarse ends off asparagus stalks leaving spears

Preheat oven to 250F . Combine sugars, mixing well to integrate them
evenly. Spread the mixture on a baking sheet and dry it in the oven for
about 1 hour. Transfer to a blender and process to a fine powder. Set

Assembly:
Preheat oven to Caramelized pear tart Cream butter and sugar until smooth. Add egg yolks and zest, mix well. Add
almonds and flour, mix well. Form into ball, wrap with plastic and chill 1

roll out dough Bean pate Puree the cooked beans, using the liquid as needed to make a smooth puree.
Combine the puree with the remaining ingredients except the olives. The
mixture should be thick. Chill, covered, for at least 1 hour. Garnish
with olives, if desired a Double blueberry tart Cream butter and sugar well. Add flour. Divide in thirds and pat each
third in 8 inch springform pan. Will refergerate for 3 days or can be
frozen.
Filling (Makes 1): 3 c blueberries 6 T sugar 1/2 t lemon peel 1 T
lemon juice 1 baked shell powder Pate Mix all ingredients.
Pour into Pyrex casserole.
Cook for 1 hour at 350F
Triple onion walnut pate In large skillet, fry red and yellow onions in hot oil, until
golden. Lower heat and cook 2 to 3 minutes longer until limp. (Do
not let onions become too brown.) Add scallions and heat through.
