Pancakes



Ingredients:
1/2 Cup(s) Unbleached white flour 2 Egg whites, slightly beaten
1 Cup(s) Whole wheat flour 1/2 c (to 1 cup) fresh or frozen
1 Teaspoon(s) Baking powder -blueberries
1 Cup(s) Non-fat milk 1 tb Orange bits (optional)
Directions: Sift dry ingredients together. Combine milk and egg whites. Stir into dry ingredients just until moistened. Carefully stir in blueberries. Drop batter onto heated non-stick pan (griddle). Cook until bubbles appear, turn and cook other side. Serve warm with sauce (see separate recipe titled Pancake-Waffle Sauce for Diabetics). Makes 10 to 12 pancakes.
