Wild mushroom sauce #2 In a saute pan heat the butter and olive oil. Add the shallots and cook
until softened. Mix in mushrooms, garlic and salt and pepper. Cook for 5 to
7 minutes or until firm. Add Madeira and reduce for 1 minute. Stir in
demiglace. Bring to a boil an Asparagus & mushrooms with black bean sauce Cut asparagus on the diagonal into 1-2 inch pieces. Blanch for 5 minutes in boiling water. Drain and set aside. Wash and slice mushrooms. Set aside. Mince the garlic. Rinse the black beans well. Mix garlic and beans together. Set aside. Mix together the Melocoton con vino (peaches in wine sauce) Combine sugar, water, cinnamon, lemon and salt in a saucepan. Bring to a boil and simmer for 15 minutes. Cool. Mix wine with the syrup and pour over the peaches, making sure they are all covered. Refrigerate for up to 2 days and serve.

Set oven control to broil. Place venison steaks in greased broiler pan (without the rack) and spoon 1/2 cup of the barbecue sauce evenly over Chili sauce meatballs Combine ground beef, bread crumbs, salt and pepper in a bowl. Tomatillo-papaya sauce From Casa Madrona Restaurant in Sausalito, Calif.
Simmer tomatillos in stock until tender. Saute cilantro and chopped
green onion tops briefly in 1 Tbsp. safflower oil. Mix all
ingredients in blender and puree until smooth. Strain and season to Kari-kare (meat and vegetable stew in peanut sauce) 1. Place hocks or oxtail pieces in a large pot. Add enough water to
cover. Bring to boil, lower heat and simmer for 1-1/2 hours or until
tender.
2. If using achute water, soak 1 tablespoon of achute seeds in water for 30 minutes. Squeeze see Bavarian cream with raspberry sauce Sprinkle gelatin over cold water to soften.
Heat milk to simmering. Stir in salt and two tablespoons sugar. Stir

amounts of mixture in a blender until smooth.
Melt shortening in a skillet and saute the puree for 10 minutes Herbed horseradish sauce for fish In medium bowl, combine ingredients. Mix well. Cover and refrigerate.
Serve with grilled or poached fish.
