Slice th Stir-fried eggplant In a wok heat the oil, then toss in the Szechuan peppers. After about 30 seconds (long enough for the scent to be released) toss in the cubed eggplant and the garlic. Fill into plastic lunch box. Mix for cooking. Nuke for 10 minutes on high.
Note: This can also be made using a pre-cooked sweet potato. Then the nuke time is reduced to 3 minutes f Slow potatoes Pre-heat oven to 300 deg. F. Thoroughly wash and clean potatoes, and remove
any 'bad' spots. Pierce potatoes at least twice, and be sure to penetrate
to the center or beyond. Place potatoes on top oven rack, about 3/4 way up.
Bake for 4 Whipped sweet potatoes with nutmeg and lemon Cook sweet potatoes in large pot of boiling salted water until tender, about 15 minutes. Drain well. Transfer to large bowl and puree in mixer or processor in batches. Return to pot. Mix in butter, molasses, 2 teaspoons lemon peel and 1 1/2 teaspoons nutm Browned cream potatoes Melt 4 tablespoons butter in a saucepan, stir in flour, blend. Gradually add cream and cook, stirring constantly until sauce bubbles and thickens. Add salt, pepper, onion and nutmeg, blend thoroughly. Add potatoes to the sauce, mix well. Pour into a light Skinny buttermilk mashed potatoes In pot of boiling salted water, cook potatoes for about 20 minutes or until
fork-tender; drain well. Mash, rice or pass potatoes through food mill to
remove all lumps.
Using fork, gradually beat in buttermilk, then butter. Stir in dill and

Mix everything except corn flakes and butter. Put in a non greased 9x12 baking dish. Mix corn flakes and remaining butter and sprinkle on top.
Greek potatoes Toss potatoes with lemon juice, oils, spices & garlic in a deep flat
pan. Add water. Bake uncovered for 1 1/2 hours at 475F. Stir every
20 minutes. Add more water if necessary. Allow the potatoes to
