Directions: In 7-inch nonstick skillet,heat oil over medium-high heat; cook ham.

Add stock, and hot pepper sauce (if using); cover and cook over medium
heat for 5 minutes or until potatoes are almost tender. Stir in green
pepper, corn and tomato.

or until eggs are set. Place egg on each plate; surround with vegetables.
Sprinkle with parsley.

Acapulco baked eggs These recipes come from Culinary Cyber Sleuth. The first one has no chiles
but think they would make a wonderful addition and it sounds great for a
special holiday occasion, as does the 2nd one.
Put butter in 8-inch square baking pan. Set pan in 3 Texas hash (slightly adapted) Cook the meat, onions and sweet pepper in a frying pan until the meat
is browned and the vegetables are tender. Drain off any excess fat.
Add the tomatoes, chili powder, and simmer briefly. Salt to taste.
Mix the meat mixture with the rice, and place in Poached pears Simmer lemon juice, halves, red wine, honey, raisins, creme and cinnamon
stick COVERED for 5 minutes. Remove cinnamon stick.
Simmer pears (very gently) for 10-20 minutes. Check frequently for
doneness.
Carefully remove from poaching liquid. Chill.
