Directions: Saute' vegetables and seasonings in olive oil. Stir rice and vegetables into a rectangular casserole dish, and pour water on top. Bake at 400 F. for 45 minutes; remove and sprinkle with cheese and olives; cover and return to oven for an additional 10 minutes.
