Orange-Chipotle Salsa



Ingredients:
2 Cup(s) sections of orange
1 diced red onion
1 small diced red bell pepper
2 Clove(s) garlic
3 Tablespoon(s) minced canned chipotle pepp or 2 dried chipotles
1 Tablespoon(s) ground cumin
1 Cup(s) fresh lemon juice
1 Pinch(s) (or to taste) salt
1 Pinch(s) (or to taste) pepper
Directions: If using dried chipotles, soak them for 20 minutes in very hot water, changing the water out after 10 minutes. Combine all the ingredients and serve with grilled meats or vegetables. Keeps for up to 5 days in refrigerator. Best on second day.
