Ingredients: 3/4 confectioner's sugar 1 organic or finely milled whole wheat flour 326/625 Pound(s) granulated sugar 1/6 Ounce(s) vanilla extract 1/2 maple flavoring 417/10000 Ounce(s) salt 1/6 Ounce(s) cream of tartar 12 large, whites egg Directions: 1. Beat egg whites with cream of tartar and salt until soft peaks form. 2. Add maple flavoring and vanilla. 3. Gradually add granulated sugar, 1 tbsp. at a time, beating until sugar is used and stiff peaks form. 4. Sift flour and confectioner's sugar together twice. 5. Fold about 1/4 of flour mixture gently into egg whites with rubber spatula. 6. Fold in remaining flour until incorporated into egg whites. 7. Pour batter into ungreased 10 in. springform pan. 8. Bake in 325 degree oven for 45 minutes until wooden pick inserted in center comes out clean. 9. Remove from oven and immediately invert pan to cool.
