Directions: 1. Cover tray with waxed paper.
2. Melt 1C semi-sweet chocolate chips and 1T shortening (see melting/drizzeling procedure). Stir in 1.25C chow mein noodles and .25C oats. Drop by heaping teaspoonfuls 2" apart onto prepared tray. Flatten slightly. Press 2/3C peanut butter chips into cookies. Allow to stand until firm.
3. Melt remaining 1C peanut butter chips and remaining 1T shortening (see melting/drizzeling procedure). Stir in remaining 1.25C chow mein noodles and remaining .25C oats. Drop and flatten as directed. Press remaining .5C chocolate chips into cookies. Garnish with apricots, if used. Allow to stand until firm.
Melting/Drizzling Procedure:
Start with chips and crisco, then: place in small microwave safe measuring cup or bowl. Microwave at 50% medium, stir after 1 minute, repeat until smooth. Drizzle from tip of spoon.
