Mulligatawny Soup



Ingredients:
2 lemon juice
2 cooked and diced chicken
2 diced potato
1 black pepper
1 chopped celery
1 cumin, ground
1 oregano
1 diced carrots
1 thyme
1 chopped onion
1 onion, red
2 sugar, white granulated
1 chopped red pepper
2 curry powder
2 chopped eggplant
4 chicken broth
2 coconut milk
Directions: Put all ingredients into a slowcooker or stockpot except for the lemon juice, coconut milk and sugar. Simmer for four to six hours. One half hour before serving remove two - 3 cups of soup and process in a blender until smooth. Return the blended ingredients to the soup. Add coconut milk, lemon juice and sugar. Allow to cook for another 30 -60 minutes, stirring often.
