Mucho Frijoles Soup



Ingredients:
2 Cup(s) Dried Beans
1 1/2 Teaspoon(s) Salt
1 large Onion, chopped
1 Centiliter(s) Garlic, crushed
1 1/2 Pound(s) Meaty Ham Hock
2 Cup(s) Chopped Fresh Tomatoes
1 Jalapeno Pepper, chopped
3 Tablespoon(s) Fresh Lemon Juice
1 Teaspoon(s) Fresh Ground Black Pepper
2 Cup(s) Chicken Stock
Directions: Wash beans and put in a large stockpot. Add water to cover and add salt. Soak overnight. Drain and add remaining ingredients. Simmer over low to medium heat for 3-4 hours or until tender. Remove ham hock. Pick meat off bone and return meat to pot. Discard bone and fat. Soup is ready to serve.
