2 1/2 Cup(s) Apples; chopped
1 Teaspoon(s) Dark molasses (treacle)
4 Cup(s) Grated carrots
1 Cup(s) Raisins
1 Cup(s) Pecans; chopped (or walnuts)
1 Cup(s) Coconut
2 Apples; pared and grated
6 Large eggs
2 Cup(s) Dark molasses
4 Teaspoon(s) Vanilla
Directions: Preheat oven to 350 degrees. Sift dry ingredients together. Stir in carrots, raisins, pecans, coconut and apple. Beat together eggs, oil and vanilla. Stir into flour mixture until blended. Spoon batter into well-greased muffing cups, fill to top; bake for 35 minutes. Let cool in tins on rack for 5 minutes. Makes 30 large muffins. NOTE: This is a quantity recipe. Cut recipe in half and it will make approximately forty 2-inch muffins. Freezes well. From Theatrical Seasonings ENCORE!
