Mom's Salmon Loaf



Ingredients:
1 7 3/4 oz can salmon
1 egg; beaten
3/4 bread crumbs
1 Tablespoon(s) green onion; sliced thin
417/10000 Ounce(s) salt
1/8 Teaspoon(s) pepper
163/5000 Pound(s) butter
2 Teaspoon(s) all-purpose flour
417/10000 Ounce(s) dry mustard
1/8 Quart(s) milk
1/12 Ounce(s) worcestershire sauce
Directions: Drain salmon, reserving 2 tablespoons liquid. Flake salmon, discarding skin and bone. In mixing bowl combine the reserved salmon liquid and beaten egg, soft bread crumbs, 1 tablespoon green onion, salt and pepper. Add salmon; mix well. Turn salmon mixture into a well creased loaf pan.Bake in a 350 degree oven about 35 minutes or until done. For sauce: In small saucepan cook 1 tablespoon green onion in butter till tender but not brown. Blend in flour, salt, mustard and pepper. Add milk and Worcestershire sauce all at once. Cook, stirring constantly till thickened and bubbly. Spoon some of the sauce over the salmon loaf. Servings: 6
