Ingredients: 1 Pound(s) large, cooked, peeled potato 163/2500 Pound(s) flour 1 Pint(s) for frying peanut oil 1 small, sliced onion 10 wood ears 869/10000 Ounce(s) salt 27/5000 Pound(s) sugar 2 25/32 Ounce(s) water 1/2 Pound(s) snow pea pods |
Directions: Wood ears must be soaked to soften, tough ends removed and cut in slivers.
Sprinkle potatoes with flour and deep-fry until
golden.
Drain and set aside.
Pour off all but 2 tablespoons of the oil, reheat an add onion.
Stir-fry 10 seconds and add snow peas and wood ears.
Stir-fry another 10 seconds and add salt, sugar and water.
Bring to rapid boil, stirring constantly, and cook until peas are just tender crisp.
Add reserved fried potato slices, heat through and serve.
Note:
Wood ears are a type of mushroom or shelf fungus. When soaked it has a crunchy, gelatinous texture with little taste.
If you can't find them, I imagine that you could use the dried mushrooms although they wouldn't give exactly the same effect.
A closer substitute would be dried jellyfish, but if you're somewhere that sells dried jellyfish, I'm sure that they have wood ears as well...

Barbecued skewers of fish - seekh ki machali Fillet and skin fish, then cut into 11/2 inch cubes. Put about 5 pieces on
each skewer and sprinkle with salt. Make a paste from the garlic, ginger,
spices, and yoghurt and use to cover the fish. Leave for a few hours, then
grill. The skewers can Grilled fish in foil On 4 large buttered squares of heavy-duty aluminum foil, place equal

Baked fish with lemon pepper crust Preheat oven to 450F. In a bowl, combine the breadcrumbs, parsley, lemon
pepper and salt.
Dip the fish into the melted butter and coat both sides with the breadcrumb
mixture.
Place on a baking sheet and bake for 10-15 minutes or until the fish flakes
eas Sicilian fish stew with tomato and parsley Heat olive oil in heavy large pot or Dutch oven over medium-high heat.
Add chopped onion and garlic and saut 4 minutes. Add parsley and stir 2
minutes. Add tomato and cook 2 minutes longer. Add 1 1/3 cups cold water
