for them at Mexican and Latin American markets. Adobo marinade goes
particularly well with pork.

In a 10-12" frying pan over medium heat, combine stems, onions,
garlic, cumin, chili powder, and 1/4 cup water. Stir often until
vegetables begin to brown. Add 2 tables Mexican corn soup Combine corn, onion, garlic clove and water in medium saucepan. Cover, simmer about 5 minutes, or until corn is tender. Discard garlic clove.

Remove the seeds.
Place the peppers, cut side facing down, on a rack above boiling water.
Cover the pot and steam for about 10 minutes, or until the peppers are just
beginning to get soft. Chorizo (hot mexican sausage) Combine cumin, red pepper, corriander and cloves in sm. saucepan and shake
over med. heat until peppers are slightly toasted and seeds begin to
crackle, abt. 1 min. Combine toasted seasonings and remaining dry
seasonings in mill or mortar and grind Impossible mexican fiesta casserole Heat the oven to 375 degrees F.
Cook and stir the meat in a large skillet until brown. Drain off the
excess fat. Season the meat with the salt and pepper, then set
aside. Mix the cheese, sour cream, mayonnaise and onion and set this
mixture Chorizo a la mexicana (mexican sausage) Grind coarsely or chop pork. Add all other ingredients and mix thoroughly.
Let stand for several hours. Fry without adding fat for about 30 minutes.
If you aren't going to use immediately, pack the uncooked chorizo in a
crock or glass jar and Mexican lasagna <t> Cook noodles according to package directions. Rinse and drain.
In a small saucepan, mix beans and salsa and heat over a medium flame until
runny (helps to spread the mixture). Place a small amount of the bean
mixture in the bottom of a square 8 Mexican enchiladas with sour cream Note; Cheddar, Queso Mexicana or Longhorn cheese can be used....I've even used colby jack cheese.
Sauce
In a bowl mix the yogurt, sour cream, green onions
and green chili salsa. Pour the enchilada sauce into another bowl.
Cooking Tortillas:
In hot oi Mexican manicotti In a bowl, combine the uncooked beef, beans, chili powder, and oregano. Spoon into uncooked manicotti shells; arrange in a greased 13 in. x 9 in. x 2 in. baking dish. Combine water and picante sauce; pour over shells. Cover and refrigerate overnight. Verduras y chili con carne (mexican meat stew) In deep pot cook vegetables in boiling, salted water about 10 min.; add
Gebhardt's Chili con Carne, tomatoes, rice; simmer until vegetables are
tender and gravy heavy. Do not stir mixture, or over-cook vegetables.
Yield: 12 servings.
Mexican lentil casserole (vegan) In a medium saucepan, combine onions, green pepper,
celery and water. Bring to a boil over medium heat.
Stir in lentils, cover pot, reduce heat to low and
simmer 40 minutes.
Preheat oven to 375 degrees.
Lightly spray a 1 3/4-quart cassero Mexican chef's salad Bone and dice the chicken. Heat a small amount of vegetable oil in a large
frying pan until it starts to smoke. Add the chicken cubes and fry over
medium-high heat, stirring frequently, until they are browned (2 or 3

Cook sausage and pepper and add to dish. Mix together remaining ingredients

in oven....heat oil in good sized pot, add the dry rice, and cook on high

until sugar is a dark, caramel-colored liquid. Remove from heat and pour

Soup Mix, tomato sauce, water kidney beans, corn and seasonings; mix well.
