skewers through prawns, lengthwise, from head to tail with only 1 to
a skewer. Combine all ingredients in saucepan and cook over medium to
low heat, stirring, until butter is completely m Steamed trout with ginger and garlic First of all, rinse the trout and dry it with kitchen paper, then sprinkle the outside of the fish with salt and leave aside for half an hour to help firm up the flesh. Combine apricots and water in a small saucepan. Bring liquid to a boil,
cover and simmer for about 15 minutes Chocolate-ginger madeleines Mix first 5 ingredients and set aside. Preheat oven to 350F. Grease
molds. Melt butter and chocolate together in saucepan. Remove from heat and
stir in sugars; stir in spice mixture. Beat in eggs thoroughly to form a
smooth batter. Fold in 1 cup f Ginger-soy marinated halibut In a large mixing bowl, mix all ingredients. Let halibut fillets marinate for at least 15 to 20 minutes. R
emove halibut from marinade and pat dry with paper toweling. On a hot grill, cook halibut on both sides until thoroughly cooked. Remove from grill a Ginger chicken stir-fry In shallow baking dish, combine teriyaki sauce and water; add chicken
pieces, coating well. Cover and refrigerate two hours. Drain marinade
from chicken pieces. In large skillet or wok, heat oil; stir-fry chicken
and onion until chicken is s Brook trout with ginger stuffing 1. Place the shrimp, cream, ginger, shallots, Tabasco and salt and pepper to taste in the bowl of a food processor. Start blending, puree until the mixture is smooth and thick. This should take about 30 to 40 seconds.
2. Open the brook trout, divide the Zucchini shreds with ginger Heat the oil in a large frying pan over high heat for 3 minutes. Add the
cumin, let the oil darken slightly (about 10 seconds) and add ginger and
chili. Cook for 30 seconds, stirring frequently.
Add the zucchini and stir-fry for 3-4 minutes. Ginger-soy marinade Mix all ingredients together in a small bowl. Use to marinate meat, fish,
chicken for an hour or overnight, turning to coat from time to time.
Remaining marinade may be used to baste meat while is cooking.

Food Frozen cinnamon nut yogurt Thoroughly combine yogurt, sugar, cinnamon and salt in mixing bowl. Stir in
whipping cream and vanilla. Add nuts. Cover and refrigerate 30 minutes.
Freeze according to manufacturer's directions.
Frozen peach yogurt (all) Put peaches on cookie sheet in single layer and freeze until firm, about 5
hours.
15 minutes before serving, remove fruit from freezer.

Combine ingredients in a blender or food processo Ginger broccoli Bring a large pot of water to a boil over high heat.
Peel broccoli stems. Cut stems lengthwise into long, thin strips so each
has a floweret or two at top. Drop into boiling water. Cook 3 minutes or
until just tender. Drain.
Heat oil in a large, Pumpkin coconut ginger soup Remove the pumpkin skin and seeds, chop pumpkin into chunks. Slice onion. Crush garlic. In a large pan, saute the onion and garlic in a little oil until golden. Add chunks of pumpkin and saute, stirring, for five minutes. mix well. Drain the cucumber and add to the yogurt with the mint, salt,

Ginger-banana chutney Most people think of Trinidad, Guyana, and Martinique when they think of East Indian influences on Caribbean cooking. Jamaica, however, has had its share of that influence as well, as proved by this chutney that is prepared from bananas and ginger. Makes Melon & prosciutto Cut melon lengthwise into halves; scoop out seeds. Cut each half
lengthwise into 6 wedges; remove rind. Cut crosswise slits 1-1/2
inches apart in each melon wedge. Place several strips prosciutto
over each wedge; push prosciutto into slits.
