Ingredients: 3 spinach, fresh 1/4 medium tomato, fresh 1/4 small onion, yellow 1/2 pepper, red 1 garlic, fresh cloves 1/4 rinsed & drained beans, kidney, white 1/4 rinsed & drained beans, chickpeas, canned 1/4 rinsed & drained corn, canned 2 vinegar, balsamic 1/4 pepper 1 1/2 shredded cheese, cheddar 1/4 oil, olive |
Directions: 1. Rinse, dry and chop spinach, tomato and bell pepper.
2. chop onion and mince garlic, set side.
3. Rinse and drain kidney beans and chickpeas in colander.
4. Combine all ingredients in a large salad bowl.
5. In a small bowl, whisk oil, vinegar and black pepper, pour dressing over salad and toss to coat.
6. If possible, let mixture stand 1 hour in refrigerator to meld flavors.
7. Garnish with a sprinkling shredded cheese.

Mince the garlic. Rinse the black beans well. Mix garlic and beans together. Set aside. Mix together the Sweet & sour pasta salad Cook Spirals as package directs. Rinse and drain. Add drained beans,
diced red pepper, green onions and basil. Prepare dressing. Mix into
salad and serve.

Combine sauce ingredients in saucepan, bring to rolling boil. Reduce heat, simmer until sauce is consistency of maple syrup, about 20 minutes. Remove from heat and cool.
My personal preference is to half the soy sauce, water and honey or brn. sugar Dandelion salad Wash the dandelion greens carefully. Drain well and cut into pieces. Add
the onions, tomatoes and cheese. Toss to mix.
Make a salad dressing by mixing the pepper, salad oil, vinegar and dill.
Dress the salad, toss and serve.
NOTES:

Mix all ingredients in large saucepan on mediumhigh heat. Bring to a boil; reduce heat to low. Simmer 10 minutes.
