Broiled or grilled marinated chicken (gai yang) A street and market food served everywhere in Thailand, this chicken is
traditionally associated with the Northeast. At the train stations or bus
stop, you can get a few skewers and a little bag of sticky rice for a
delicious snack or light lunch. Herb-marinated flank steak Make cuts about 1/2 inch apart and 1/4 inch deep in diamond pattern in
both sides of beef.
Mix remaining ingredients; rub into beef. Place in plastic bag or shallow
glass baking dish. Fasten bag securely or cover dish with plastic wrap.
Refriger Cuban-style marinated pork Combine first 5 ingredients in a food processor or blender and blend until
finely chopped. Add half the orange juice and process. Pierce pork all over
with a sharp knife or fork. Place pork roast in a large Dutch oven or
flameproof casserole dish.
Marinated chickpea salad w. radishes and cucumbers In a large bowl, combine the olive oil, lemon juice, garlic, lemon zest and cumin and season with salt and pepper. Add the chickpeas and let marinate for at least 25 minutes, stirring occasionally.

microwave on high 9 to 12 minutes, or until carrots are tender, stirring

lemon juice in each of two bowls. Add the dill to the first bowl and the
