Marinade for Whole Fish



Ingredients:
2 Teaspoon(s) Coarse salt
1 Tablespoon(s) Whole white peppercorns, finely cracked
1/4 Teaspoon(s) Red pepper flakes
2 Tablespoon(s) Finely chopped fresh coriander
1/4 Cup(s) Shallot -- finely chopped
Directions: In a mortar or spice grinder combine salt, peppercorns and pepper flakes (if using a mortar, add coriander; if using a spice grinder, add coriander with oil) and grind until well combined.
