The Berberes are a nomadic tribe in northern Africa. Fenugreek is a
rectangle-shaped seed with a pleasantly bitter flavor. Look for it in
Indian and Middle Eastern grocery stores. I hav Herb and oil marinade Combine ingredients. Allow meat to marinate in shallow glass dish for
4 hours in refrigerator. Baste with marinade during broiling or
barbequing.
Lamb skewer marinade Mix all ingredients together. Place in ziploc bag and add diced lamb
tenderloins. Let marinate for 3-4 hours. Skewer then grill.
Teriyaki marinade Mix all the ingredients in a jar. Use on beef, chicken, and pork. To give grilled meats an added glaze, use 1 1/2 times the amount of sugar called for and baste frequently during grilling so that marinade caramelizes on meats. refrigerator. Drain and discard Bourbon marinade (all-purpose) Mix all ingredients in a large glass or earthenware bowl until well
blended. Add meat to marinade. Refrigerate for 8 hours or overnight,
turning 4 times.
(Makes 6-1/2 to 7 cups)

Juice Mandarin marinade Combine all ingredients and mix well. Refrigerate at least two hours to
allow flavors to blend.
Madeira wine marinade for chicken and pork Combine all ingredients in a nonaluminum saucepan and mix well. Cook over
medium heat until sugar dissolves. Cool, pour over pork or chicken and let
marinate overnight in refrigerator. Remove from refrigerator 1 to 2 hours
before grilling. Deer jerky marinade Marinade deer meat for 24 hours in the marinade mixture, covered, in
a cold part of the refrigerator. Turn meat several times. Remove
meat, spreading out to bring to room temp. Place on greased racks in
a smoker and smoke at a low heat (160-190 Oriental marinade Combine and marinate for 3-4 hours, preferrably in fridge.

Alfredo's bbq fish marinade Mix all the above ingredients in deep dish. Marinate fish for one hour
before grilling.
Tastes very good on fresh Mahi Mahi or Ahi Tuna. Depending on your
preference you can cut back on the salt. I prefer to cut back on the salt
by at least half Herb & oil marinade Combine ingredients. Allow meat to marinate in shallow glass dish for 4
hours in refrigerator. Baste with marinade during broiling or barbequing.
Skip's marinade Combine all ingredients; pour over meat to cover at least 1/8 inch all around at least three hours before grilling.

Balsmic-shallot marinade In a blender or food processor, combine the vinegar, shallots, sage,
rosemary and pepper. With the machine on, add the olive oil in a slow,
steady stream and blend until emulsified.
Good on any kind of beefsteak, pork, lamb, chicken: marinate Spicy steak marinade Combine all ingredients. Use to marinate any steak for about an hour. Use
marinade to baste beef while cooking. Serve garnished with olives if
desired.
