Directions: In a small heavy saucepan, wilt the onion, ginger and garlic in olive oil over low heat for about 5-7 minutes, stirring once or twice.
Add the remaining ingredients. Bring to a boil, and cook for 3 to 5 minutes, stirring. Reduce heat to medium and simmer for 10 minutes to thicken sauce,
stirring occasionally. Strain and finely mince the onion, ginger and garlic; return to the sauce. Remove from heat and cool to room temperature.
Refrigerate covered, until needed.

Butternut squash with ginger Peel and seed the squash. Cut into 1/2 inch cubes. Put the squash, gingerroot, and apple juice into a lightly oiled baking dish. Cover and bake in a 350 degree oven for 50 - 60 minutes. Sprinkle with nutmeg just before serving.

Butter ginger sauce for pasta Melt butter in a medium skillet. Add everything except cheese and
cook until garlic is tender, about 4 minutes. Combine hot pasta, toss

It is a basic sauce that is quite delicious, of course it's not the best for you but that is okay.
