Directions: Brown smoked Sausage in skillet. Add beans, chili powder, and cumin, and

together lettuce, green pepper, tomatoes, cheese, avacado, and celery with
the dressing and hop pepper sauce. Add taco chips. Mix in hot sausage/bean
mixture and serve immediately.

Rice & lentil salad Cook grains separately, in 2 cups water, until done, 45 minutes or less.
For the dressing, I used a prepared nonfat tomato-herb dressing (Trader
Joe's) mixed about half and half with red wine vinegar because I generally
find prepared nonfa Italian pasta salad 1) Combine all ingredants except tomatoes and 1/2 cup of parmesan cheese.
2) Cover and chill overnight.
3) Remove from refrigerator 1 hour before serving.
4) Stir in tomatoes and garnish with remaining parmesan cheese.
90s style chicken salad In deep saucepan, place chicken. Add broth and 4 teaspoons of the
curry powder. Cover and simmer about 30 minutes or until chicken is
fork tender. Remove from heat and allow chicken to cool in broth.

1/2 cu Bulgur salad Soak bulgur in warm water for 10 minutes; drain well. Place in a
medium-sized bowl. Heat the oil in a skillet over medium-low heat and saute
onions for 5 to 6 minutes. Add onions and oil to the bulgur. Mix the tomato
paste with a drop of water to li Carrot cilantro salad Whisk together the lemon juice, olive oil, sugar, salt, and pepper in a
large bowl. Add carrot, green onion, cilantro, lemon rind, and cumin seed;
toss to mix. Serve immediately.
Rice-vegetable oriental salad Cut the vegetables into 1/2-inch cubes. Place the vegetables in a heavy
saucepan with the soy sauce. Cover and simmer over low heat for 5 to 7
minutes until the vegetables are barely tender. Cool and add the
remaining ingredients. the beef. Cover and refrigerate at least 8 hours, turning occasionally. Set

medium-high heat until fully cooked but not mushy, 25-30 minutes.
Drain. Rinse under cold water. Dry well. Whisk together 2 tb peanut
oil, 1 tb vinegar and 1/4 ts peanut butt Ambrosia salad Drain fruits well. Combine all ingredients except lettuce and salad
dressing, mixing lightly but thoroughly. Chill well. Serve in lettuce
cups with salad dressing, if desired.
