Directions: To make filling:
a. In a medium sized mixing bowl, combine bulgur, tomatoes, pepper and
onion.
b. Add boiling water. Stir and cover with a dinner plate. Let sit for 15
minutes.
c. Add miso and arrowroot, stirring thoroughly.
d. Fill and cook tamales acording to "Tamales Basic Procedure". (See
recipe).

Bulgur wheat pilaf with mushrooms In large saucepan, bring chicken broth to a boil. Brown the bulgur in a
large skillet in the oil and butter. Add the green onions and mushrooms and
cook for another 1 or 2 minutes. Pour the bulgur and vegetable mixture into
the pan of broth and add 5-spice tamales Combine filling ingredients in a mixing bowl Fill and cook tamales.
****Hint Make your own Chinese 5 spice blend by mixing equal anounts of
Star anise, Szechuan pepper, cloves, cinnamon, and fennel seed. Grind
spices into a powder with amortar a Bulgur meatballs (keftede) Place the bulgur in a small bowl, add enough
cold water to cover and let soak for 10 minutes. Drain through a sieve
lined with a piece of cheesecloth. Wrap the cheesecloth around the bulgur

Bulgur biscuits Mix flours, bulgur wheat, corn meal, and instant milk. Add 2 cups broth;
mix well with hands until dough gets stiff. Add more broth as necessary. On
lightly floured surface with floured rolling pin, roll dough to 1/4"

and vinegar. Fill with the meat mixed with seasonings and put the

is soft enough to bite, about 25 minutes. Do not drain.
2. Add ingredients to bread machine pan according to manufacturer's
directions.
3. Select basic cycle.
4. Rem Bulgur pilaf with fava beans Remove beans from their pods and put shelled beans in a quart of boiling,
salted water for 1 minute. Drain and run under cool water. When cooked,
