MANDARIN ORANGE SALAD



Ingredients:
2 green onions
1 diced celery
1/4 head, romaine lettuce
1/4 head, red lettuce
1/3 sliced almonds
1 red pepper sauce
1 Ounce(s) black pepper
1 Bunch(s) snipped fresh parsley
1/16 Quart(s) olive oil
2 cider vinegar
509/4461 Pound(s) sugar
1/12 Ounce(s) salt
11 (1 can) mandarin oranges
Directions: Chop the green onions including the greens. In a fry pan, heat almonds and 1-1/2 T. sugar until sugar has coated the almonds and caramelized the almonds; remove from heat. Blend together the salt, 2 T. sugar, vinegar, oil, parsley, pepper and red pepper sauce. In a large bowl, tear lettuces into bite-size pieces; toss together with the celery , onions and mandarin oranges. Pour dressing over salad; toss. Serve immediately.
