Ingredients: 1 3/10 Pound(s) 4 boneless skinless halves chicken breast 4/23 Pound(s) flour 1/12 Ounce(s) salt 1/12 Ounce(s) freshly ground black pepper 39/2500 Quart(s) olive oil 2 juiced lemon 4 Tablespoon(s) or chicken stock white wine |
Directions: Remove excess fat from the chicken breasts and slice each piece into several 1" thick strips. Mix together the flour, salt, and pepper. Dredge the chicken in the flour mixture. Heat a large skillet over medium-high hea. Once the pan is hot, add the oil and swirl to coat. Add the chicken pieces and sear until golden brown, 2 to 3 minutes per side. Remove the chicken and set aside. Add the lemon juice and wine or chicken stock and stir to scrape and brown bits from the pan. Bring to a boil, reduce the heat to medium-low, and allow mixture to simmer until reduced by half, about 4 minutes. Add the chicken pieces, cover, and finish cooking, turning halfway through, for 8 more minutes. Serve immediately topped by any extra lemon sauce.
Goes good with seasoned rice and steamed snow peas.

Preheat oven to 375 degrees. Remove excess fat from chicken; season
with salt. Combine rice, fruit, onion, 2 tsp of the curry powder,
sugar, salt and water in a 12x8x2-inch baking dish; sti Orange five-spice chicken Mix together zest, juice, five-=spice powder, ginger, and vinegar. Pour
over chicken breasts placed in casserole dish. Preheat oven to 350 degrees.
Cover dish and bake for 40-45 minutes. Serve hot over rice with about a
