Directions: This is a tangy marinade, containing equal amounts of lemon juice and oil,
and is good for rich meats like chicken thighs. It can be used for chicken
breasts too, but their skin should be on for additional protection during
grilling or broiling. Thyme gives this marinade a flavor loved in France,
but you can substitute oregano for an Italian or Greek accent, or mint or
cilantro for a Lebanese touch.
Mix ingredients in a small bowl.
Makes about 1/4 cup, enough for about 1 1/2 to 2 lbs poultry.

lid. Cover and shake well; add oil and shake again. Pour over steak in a

Makes enough for 2 pounds of beef.
To use: Toss paper-thin slices (1 inch by 3 to 4 inches) of beef sirloin
with the marinade in a nonmetallic bowl. Refrigerate 6 to 8 hours or

Chile pepper jamaican jerk marinade Roast the pimento berries in a dry skillet until they are fragrant, about 2 minutes. Remove and crush them to a powder in a mortar or spice mill. Place all the ingredients in a blender or food processor and puree to make a sauce.
Store in the refrigera Caribou marinade i- juniper Combine ingredients in a non metal bowl. Enough for 10 chops or 5 large
steaks. Cover and marinade 2 days or longer. Turn daily. The strained
marinade can be used as a BBQ baste or incorporated into gravies and sauces

Grilled halibut marinade Jim's teriyaki marinade & bbq sauce Whisk together all the ingredients except the corn starch. Marinade the
meat long enough to flavor and tenderize- 1 hr for young chicken breasts or
fish, overnight for round steak and up to 5 days for some game cuts.
BBQ and baste with the mari Rosemary lemon chicken Marinate the chicken in the rest of the ingredients for 30 minutes to
several hours. Cover and bake at 375F for 30 minutes, remove cover
and bake for another 20 minutes. This recipe is for chicken breasts

Tabaka (cinnamon-orange marinade) Source: FOODday, July 9, '91 From: Valerie Whittle
This cinnamon-orange marinade, characteristic of Balkan cooking, is a
specialty of Georgia in south-central Russia. The tabaka marinade is
usually used with chicken and game hen, but it a Lemon pudding cake Heat oven to 350F degrees. Grease 1-quart casserole. In a small bowl,
beat egg yolks; stir in milk, lemon juice and lemon peel. Add sugar,
flour and salt; beat until smooth. In another small bowl, beat egg whites
until stiff peaks form. Gently fol Argentinian chimichurri-style marinade Combine all ingredients in a glass jar with tight fitting lid. Let stand at
room temperature for 24 hours. Makes about 1-1/3 cups
Lemon ice Heat water and sugar to boiling; reduce heat. Simmer uncovered
5 minutes. Remove from heat; stir in lemon peel and juice. Cool
to room temperature. Pour into loaf pan, 9 5 3 inches. Freeze 3
to 4 hours, stirring every 30 minutes.
Serve in chil Pasta shells with lemon vinaigrette GARNISH: Sliced almonds, cherry tomatoes, lemon wedges, fresh basil leaves or fresh parley sprigs, or sauteed pine nuts, and Parmesan cheese, optional. Bring a large pot of water to a boil; cook pasta until al dente. While pasta is cooking, combine FILLI Lemon chicken kebabs 1. Light charcoal gril or preheat broiler. Soak wooden skewers in water for about 20 minutes to prevent burning.
2. Meanwhile, in a small bowl, combine oil, lemon juice, garlic, and pepper. Add chicken and toss to coat; marinate 15 minutes. Thread thre Curry marinade *4 teaspoons purchased prepared ground curry powder can be substituted for
curry mixture.
In small skillet stir together all curry ingredients. Cook over medium
heat, stirring constantly, 2 minutes. DO NOT BURN. Remove from heat; let
cool Lemon rice Saute vegetables. Add rice, water, lemon juice. Add salt and lemon zest.
Bring to a boil. Lower heat and simmer 20 minutes, covered.
Fluff.
Orange/honey marinade Combine all ingredients in a bowl. Makes about 2/3 cup
Marinade for beef steaks Combine all ingredients and mix well. Marinate beef at room temperature
for 1 to 2 hours before grilling.
Yield: Enough for four 1-pound steaks.
