Lemon Couscous Salad



Ingredients:
1/2 green onion
1 Ounce(s) zest lemon peel
1 Cup(s) chopped walnuts
1 rasins, golden
1 currants
1 Slice(s) grated ginger root
1/8 Quart(s) vegetable oil
4 Cup(s) couscous
3/8 Quart(s) lemon juice
2 1/2 Cup(s) water
4 Ounce(s) honey
Directions: -Bringer the water and lemon juice to a boil, add the couscous. -Cover and remove from heat. -Allow to steep for 5 minutes. -Fluff the couscous with a fork and toss with the remaining ingredients. -Season with salt and pepper. makes about 5 pounds.
