Mexican chicken & rice Prepare sauce in small saucepan by mixing 2/3 can tomato sauce and
spices. Add chopped, cooked chicken. Put sauce on low heat and stir
occasionally. Prepare rice. When rice is done, and remaining 1/3 can
tomato sauce to rice and stir. To serve, pl Mexican quiche 1 Put cheese into shells. Mix bacon with drained chilies and put into shells.
Beat eggs, cream and salt. Pour into shells. Sprinkle cayenne over top.
Bake at 350 degrees for 25 to 30 minutes. Cool 5 minutes.
Acapulco-los arcos mexican rice Saute onion and rice in lard until lightly browned, 6 to 10 minutes,
stirring constantly. Turn into baking dish or casserole.
In a large saucepan, combine chicken broth, tomato juice, tomatoes,
parsley, garlic, cumin and salt and pepper. Bring to Mexican chicken and rice Heat oil in large skillet on medium-high heat. Add chicken, onion and
pepper; cook and stir until chicken is cooked through. Add corn, broth
and salsa; bring to boil.
Stir in rice; cover. Remove from heat. Let stand 5 minutes. Fluff with
fo Mexican corn salad Drain corn. Combine corn, pimiento, onion, green pepper, and cucumber. Add
French dressing and mix well. Serve in lettuce cups.

Chorizo (mexican sausage) 1. Clean the casings, rinse well with water, then pour vinegar through
them. Set aside.
2. Use a food processor or the coarse blade of a meat grinder, grind the
meat and fat. Add the onions, garlic, vinegar, tequila and seasonings,
using the h Mexican lasagna <t> Cook noodles according to package directions. Rinse and drain.
In a small saucepan, mix beans and salsa and heat over a medium flame until
runny (helps to spread the mixture). Place a small amount of the bean

the tomatoes in a big measuring cup and squish them into pieces. You need
about 3-1/2 cups of liquid, so add water to the tomatoes til you get this

at 350 for about 10-15 minutes or until set. Roll in powdered sugar
while still warm.

Sauce
In a bowl mix the yogurt, sour cream, green onions
and green chili salsa. Pour the enchilada sauce into another bowl.
Cooking Tortillas:

beans and salsa. Simmer until ready to go in the oven. Meanwhile, boil
potatoes and carrots. When tender, mash them adding milk, salt and spices

Microwave on HIGH (100% power) 45 seconds.
Drain pinto beans, reserving 1/3 cup of juices. Add beans and

by hand. Place the bean paste in a sauce pan with the water and heat.
Mix in all the other ingredients, blending well, and simmer until the
cheese is melted, about 5 minutes. Put i 7 layer mexican dip Mix the refried beans and taco seasoning together (I also mix the chili's
in with this, but some people put the chilis as a layer) Mix this really
well (I used a food processor, but today I am going to use my mixer). This
is the first layer.
Mexican-style hot chocolate *Not aspertame - loses sweetness when heated.
For cocoa mix, in a storage container combine dry milk powder, cocoa
powder, sugar substitute and cinnamon. Mix well. Cover and store in
a cool, dry place up to 8 weeks.

with this attractive yet economical casserole. Mix together puree,
yogurt, green chiles, chili powder, coriander, garlic and onion

In the top of a double boiler, saute green pepper in butter till
tender. Place over hot water and add tomatos, corn, chilies, salt and
cheese. Stir till well-blended and cheese is melted. Blend Lebanese layered salad Place the bulgur in a large bowl. Combine juice, oil, 1 tsp salt, and
garlic in a small bowl, stir well with whisk. Drizzle juice mixture over
bulgur. Layer onion, tomato, parsley, mint, dill, cucumber, and bell
pepper evenly over bulgur mixture. Spri Mexican lasagna Preheat the oven to 350 F.
Coat a 13 x 9 baking dish with cooking spray.
Coat a large nonstick skillet with cooking spray, and place over medium heat.
Add the ground turkey and cook turning several times, for 5 minutes or until no longer pnk.
Remove groun Mexican beef dip Brown ground beef and drain off fat. Mix beef with taco seasoning.
Combine all ingredients into a casserole dish. Bake at 350~ for 30
minutes. Serve with nacho chips.
Mexican rice Brown the rice in a teaspoon of oil. Be careful not to overcook.
Drain rice completely. In a 1-1/2 qt saucepan, combine the water,
tomato paste, diced onion, chicken base and seasonings. Place pan on
stove and bring to a boil. Reduce heat to lo Verduras y chili con carne (mexican meat stew) In deep pot cook vegetables in boiling, salted water about 10 min.; add
Gebhardt's Chili con Carne, tomatoes, rice; simmer until vegetables are
tender and gravy heavy. Do not stir mixture, or over-cook vegetables.
Yield: 12 servings.
Mexican pita pockets Brown ground beef with onion; drain. Add beans and salsa, heat through.
Spoon 1/2 cup mixture into each pita pocket half. Top with lettuce,
tomato, cheese, yogurt and additional salsa, if desired.

butter. Nuke 2 minutes. Remove from dish. Line casserole with
tortilla strips. In another bowl, stir in soup, milk, sour cream, and
cheese. Mix. Add cooked vegetables, noodles, chic Arroz con pollo (mexican stewed chicken with rice) Dry the pieces of chicken with paper toweling. Place the oil in a
large skiilet and saute the chicken until golden brown. Add the
onion, garlic and green pepper and saute until tbe onion is
transparent and glazed. Then add the tomatoes, salt, pepp Layered hamburger pie Mix beef with egg,bread crumbs,salt,herbs,mustard,cumin and garlic
powder.Pat evenly into a 9" pie pan to make a crust.Fill crust with a layer
of potatoes,onion and mushrooms,reserving some mushrooms to ring the

Zucchini-layered meat loaf Prepare the basic meat loaf -- except spread 1/3 of the mixture evenly in an ungreased loaf pan, 9 X 5 X 3-inches. Sprinkle half each of the cheese, zucchini and pimento in layers, spreading the layers to within 1/2 inch of all sides of the pan. Repeat Mexi-cali layered dip Combine avacado, 2 tablespoons PACE Picante Sauce, lemon juice and salt; mix well. Stir in tomato.
Spoon evenly onto bottom of shallow 1-quart clear glass bowl (straight sides preferred). Top with olives; cover and chill.
To serve, top olives evenly with Mexican chicken & barley chili In 4-quart saucepan or Dutch oven, cook onion and garlic in oil until
onion is tender. Add remaining ingredients except chicken. Bring to a
boil. Reduce heat to low; cover. Simmer 40 minutes, stirring
occasionally. Add cooked chicken; cont Mexican corn and potatoes * Use either 1 or 2 of the chiles that have been seeded and
chopped.
To your own taste. Cook and stir the chiles and onion in the
margarine in a 10-inch skillet until the onion is tender. Stir in the

New mexican spanish rice In a heavy 2-quart pot, fry bacon until crisp. Remove bacon from
pan, crumble and reserve. Fry rice in bacon drippings until brown,
stirring occasionally. Add tomatoes, onion, olives, bell pepper, green
chiles, salt and chili powder. Mix well. Add Mexican nacho casserole Cook ground beef and taco seasoning mix according to package
directions. In bottom of a medium casserole, spread refried beans;
sprinkle with onions. PLace meat over beans. Bake at 400 F for 15
minutes. Tuck nacho chips around edge of casserole. T Cipate au salmon (layered salmon pie) Cut salt pork into thick strips and spread evenly in the bottom of a 2 qt casserole. Dredge salmon lightly with flour. Arrange half the fish on the salt pork. Sprinkle with half of the celery, onion and potato slices; season with salt and pepper to taste. |
