Directions: Put wheat berries and 2 cups water in a saucepan, bring to a boil, reduce
heat, cover and simmer 45 min to 1 hour, until berries are tender, but
still chewy (not mushy).
Sort lentils, removing any deformed ones and any stones that may be mixed
in. Rinse a couple of times, then put them in saucepan with 1 cup of water,
bring to a boil, reduce heat, cover and simmer about 30 minutes, again, so
they are done but not mushy.
When both lentils and wheatberries are done, drain any excess water, put
into large bowl and chill while you cut up vegetables. Vegetables can vary
according to what you have on hand. I used:
yellow summer squash green pepper sweet onion peas (I used frozen peas,
straight from the bag--they helped chill the lentils and wheatberries while
thawing) mushrooms parsley (1-2 Tbsp chopped fresh) basil (1 Tbsp chopped
fresh)
For a dressing I used some 7-Seas fatfree red wine vinegar dressing--just
enough to coat everything, but not so much that it was swimming in
dressing. The bits of red pepper in the dressing also added a little more
color to the salad. (I would have added some chopped tomato, but we were
out.) Toss everything together well and chill (if you have time; I only
chilled it about 15 minutes last night--but the veggies were all cold when
I added them--and the frozen peas helped out, too). I served this with a
crusty sourdough bread. It made 3 servings. (Two for us last night, with
enough left for my lunch today.)

Warm potato salad Quarter the potatoes and boil until tender.
Meanwhile, peel and mince garlic and place in a small jar. Wash and
dry the parsley, cut the stems off, then mince the parsley. Place in
the jar with the garlic. Add oil, vinegar, Tabasco if using, nu Spinach-strawberry salad Saute almonds in butter. Mix spinach, strawberries, almonds.
Pour dressing over and serve.
For Dressing:
Mix all other ingredients in a glass jar and refrigerate.

and dry spinach leaves. Tear into bite-size pieces and place in salad
bowl. Spread onion rings over top of spinach. Crumble bacon and put over
top. Toss with mayonnaise dressi Broccoli salad with red onions 1 x head broccoli
1 c grated cheddar cheese
1 md red onion, chopped
1/2 lb bacon crumbled
1/2 c mayonnaise or miracle whip
1/4 c sugar
2 tb vinegar
1. Mix together broccoli, cheese, chopped onions, bacon and store in covered containe Diced gazpacho salad Remove husks from tomatillos and rinse. Dice red onion to yield 1/2 cup.
Seed cucumber and cut into 1/2-inch dice to yield 1 cup. Seed red bell
pepper and cut into 1/2-inch squares to yield 1 1/2 cups. Peel avocado and
cut into 1/2-inch dice. Coarse Wild rice bean salad Cook contents of box according to package directions, cool. Add remaining
ingredients, and toss.

Lightly spray a 1 3/4-quart cassero Bean & tuna salad Mix together oil, vivegar, salt and pepper. Pour over beans and onion in a shallow bowl. Cover
and refrigerate at least 1 hour. Transfer bean mixture to serving
platter with slotted spoon. Break tuna into chunks and arrange on
bean mixture.
Anne's strawberry spinach salad Chill salad dressing and pour over salad before serving.
Mexican chicken salad Blend dressing ingredients in a blender until smooth.

Lentil & leek risotto (vrg) In a 4-quart deep pot with cover, saut leeks, garlic, and red pepper in
oil. When soft, add broth or water, and stir in rice along with
seasonings. Reduce heat and simmer covered for about 40 minutes or until
rice is done. Uncover, stir in c Baked potato salad 1. Put potatoes in a large saucepan with 1 inch cold water and 1 teaspoon
salt; bring to a boil.
2. Cover, reduce heat and simmer 25 minutes, until potatoes are tender;
drain and cool.
3. Peel potatoes and slice 1/4-inch thick; set aside.
