for the jerk recipe, I thought I'd just go ahead and post it.
I started with recipes from "Jerk: Caribbean jerk rub Blend all the above ingredients well. Rub over meat, poultry or seafood at least 2 hours before grilling. Grill as usual.
Chili seasoning mix Combine all ingredients in a small bowl and blend well. Spoon mixture into a 6-inch square of aluminum foil and fold to make it airtight and label as Chili Seasoning Mix. Store in a cool, dry place and use within 6 months.
Makes 1 package (about 1/4 cup) Far east peanut dipping sauce Mix the soy sauce and vinegar together and set aside. Put the peanut
butter in a bowl and mix in the sesame oil, blending thoroughly. Then
mix in the chili paste and cayenne pepper, blending well. Add the
soy sauce blending well. Blend in the m Mexican seasoning mix Mix well. Use 3 T. mix and 1/2 cup water for each pound of meat used.
Jamaican jerk chicken Seed and finely chop Scotch Bonnet pepper. Trim chicken of fat. In a
large bowl, combine the allspice, thyme, cayenne pepper, black
pepper, sage, nutmeg, cinnamon, salt, garlic powder and sugar. With a

Add sloppy joe seasoning mix, water and tomato sauce. Bring to a boil.
Reduce heat and simmer for 10minutes, stirring occasionally. Serve on
toasted hamburger buns.
Taco seasoning 1. Mix it all together.
2. Store in airtight container.

until smooth.
Slice pork lengthwise, cutting to, but not through, other side. Open
halves, laying each side flat. Slice each half lengthwise, cutting to, but
not through, other side; o Dutch west indian peanut sauce Combine broth and peanut butter in a small saucepan; cook over low heat 5
minutes or until smooth, stirring with a whisk. Pour peanut butter mixture
into a bowl; stir in the remaining ingredients. Serve at room temperature.
Contributor: Cooking Light May Chili ( black bean with toasted spice seasoning ) Drain beans. Place in a large pot & add 8 c water. Bring to a boil.
Add peppers, ginger, bay leaf & 1/2 c cilantro. Cover & simmer for 1
1/2 to 2 hours. Remove from heat & discard bay leaf.

lemon juice over chicken pieces. Put in a large kettle with chicken
broth or water. Bring to a boil. Lower heat and cook slowly, covered,
12 minutes. Add remaining ingredients Jerk-spiced beef tenderloin Whisk first 5 ingredients in bowl. Pierce tenderloins all over with fork.
Place tenderloins in large resealable plastic bag; add marinade and seal.
Turn bag to distribute marinade evenly. Chill at least 8 hours and up to 1
day, turning bag occasionally.
P Sloppy joe seasoning mix Combine all ingredinets in a small bowl until well blended. Spoon mixture
onto a 6-inch square of aluminum foil and fold to make airtight. Label as
Sloppy Joe Seasoning Mix. Store in a cool, dry place and use within 6
months.
Makes 1 package Jerk spice rub In a blender or mini-porcessor, combine chopped pepper, ginger and brown sugar. Process to make a coarse paste.
Add remaining ingredients. Process again to make a smooth, thick puree.

2-inch pieces. Drop into a pot of boiling water and simmer 2 minutes,
or just until tender. DO NOT OVERCOOK. Drain and rinse immediately
under cold running water until the aspara Jerk marinade Mix together all the ingredients. A food processor fitted with a
steel blade is ideal for chopping and grinding. This will provide an
excellent marinade for chicken, beef, or pork. Store leftover
marinade in the refrigerator Jerk chicken In large glass or ceramic bowl combine allspice, thyme, cayenne
pepper, black pepper, sage, nutmeg, cinnamon, salt, garlic powder and
sugar. Slowly whisk in soy sauce, vinegar, orange juice. In slow
stream whisk in olive oil. Add onion and green onion. C Alan's jerk marinade Put all ingredients except the scallions and thyme in a blender (or food
processor) and puree. Then add the remaining ingredients and run the
blender until the ingredients are well mixed, but not pureed.
Makes a little more than 1 cup (enough for West texas red beans 1 lb Dried pinto beans

Brought to you and yours via Nancy O'Brion and her Jerk chicken wings In a food processor fitted with a steel blade, combine all the
ingredients except the chicken wings. Process for 10 to 15 seconds at
high speed. Pour the marinade into a bowl and add the wings.
Refrigerate for 4 to 6 hours, stirring after 3 Caribbean jerk pork roast Pat surfaces of pork roast with paper toweling. Blend well all seasonings
and rub evenly over surfaces of pork roast. Place roast in shallow pan and
roast at 350 degrees F. for 45 minutes to an hour, until internal

Crush whole cloves and peppercorns in a spice grinder or coffee grinder. (Blender might work, too). Combine with all other ingredients, except chicken in a blender or food processor.
